Cranberry Salad Recipe

Ingredients:

  • 2 cups ground fresh cranberries. Use a food processor and grind fine
  • Add 1 1/2 cups sugar, stir very lightly and let dissolve
  • Drain 1 can of crushed pineapple, save juice
  • 2 small boxes lemon jello or 1 large box
  • 2 small boxes orange jello or 1 large box
  • 1 1/2 cups hot water
  • Add hot water to both boxes of jello. Stir to dissolve. Let cool. After it cools, add 1/2 cup pineapple juice to the jello
  • Add 1 cup diced fresh celery
  • 1/2 cup crushed pineapple
  • 1/2 cup chopped walnuts
  • 3/4 cup chopped red delicious apple
  • Chop celery, walnuts and apple to very small pieces

You can double this recipe. I do because my husband and son can eat it faster than I can make it. This is the first thing my son will ask me to make when I am cooking for a holiday. I don’t like cranberry salad but I love this. I hope you do also.

When I made this for the holidays, my family didn’t want to try it because they were like me and didn’t like cranberry salad. That dessert just doesn’t sound good. I have tried other salads and they tasted terrible. So I convinced them to try it and guess what? They loved it. They said you could taste the other ingredients in it but not the cranberry. That’s why it tastes so good.
