Make Chinese Crunch Salad

To begin:

  • 2 packages of Top Ramen Noodles (crush noodles, discard flavor packet)
  • 1/2 cup butter
  • 1/2 cup sliced almonds
  • 1/2 cup sesame seeds
  • 5-6 green onions (chopped)
  • 1 head Napa cabbage

Dressing:

  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 2 Tbls. rice vinegar
  • 1/2 cup red wine vinegar
  • 1 Tbls. soy sauce
  • 1 Tbls. honey

To prepare dressing: In shaker or soft blending combine ingredients, process, cover and chill.

To prepare cabbage: Shred or chop, place in large bowl, cover and chill.

To prepare nut mixture: place butter in a large skillet over medium heat. Add a almonds, sesame seeds and Ramen noodles. Add onions. Saute until nuts and noodles are golden brown, stirring frequently. Set aside to cool completely.

To combine: Place cabbage in large serving bowl, then pour dressing over cabbage. Add nut mixture, toss and serve.

In my experience and to the great delight of others I add a secret ingredient to the salad…

Sesame sticks. It can be gotten at almost any grocery store in their bulk items. But I have found the best tasting sticks can be found at “Trader Joe’s” store.They have a couple of flavors (plain and honey). I have found that they bring rave comments. You can add a cup or so, I like a little more as they are such a great addition to this delicious salad!
